Just look at the Nottingham vid, the pads seemed to work extremely good at those backward gaps and at that huge spin ... I guess they get them in huge blocks , chop down and glue with aradlite or something :S

Borrow some whatever bars off a mate or something ...

If you run a low pressure + a 2.5 tyre then you're going to have a lot of problems with a narrow rim :'( And about the weight , who actually felt a weight difference after changing a 521 with a wide rim? The advantages are clearly the ability to run a fat tyre with a low pressure without worries .

If you don't want to grind i think you should use some sand paper
