Grinds make a huge dfference, I don't notice a difference in brake performance even when it's raining. Then it's only tyres letting you down.
If you don't want to grind just bring some paper towels and wipe the much off the rim and pads every now and again.
I think that's it's pretty much the same as street, so taps gaps, sidehops, wedges sort of thing. You'll have to focus more on things like where you take of because rocks aren't as evil as lovely walls
