a lot of people swear by hs33 but you can get just as much power out of a vee, its all down to pads/how well the break is set up, only problem i've found is if its a "cheap" vee brake calliper it can break and ruin the brake, and the hs33 are a little easier to maintain I can't say i've used adaptors but I can't really see it adding too much weight to feel a difference, just as long as you have the booster on to stop it from pivoting around the v posts
