Myself and Joe Seddon use Salomon Cross Speed 2 xc running shoes, cut the nobbles down where your pedal sits and they're spot on. Plenty of support, nicely cushioned soles, good levels of grip and the added bonus of actually being able to walk in muddy, wet horrible ground without falling over. The don't use laces, just a nylon draw string to tighten and the're semi-waterproof with the upper drying out very quickly. Not cheap, but then riding shoes aren't, oh and they're very light.
