We have the same frame, forks and rear hub. Good choice

It may rub a little bit, but you can easily fix that by throwing a washer between the postmount adapter and the concave/convexe washers.

Get v-brakes! Only use your brakes when it is needed, like not pulling the front brake while you're on the rear wheel, or releasing the brakes when you trackstand. Or just ride more, one day your arms will get used to it

Something between 10°-20° rise and 100-120mm length will work well.

With a 3/32" allen key you can remove axle and driveshell. To proceed further you need the hub tool or follow Robert's guide.

The only difference between HS11 and HS33 is the lever. Putting a HS33 lever on a HS11 makes it a HS33.

Spank Oobah Stiffy 40 Al Seriously stiff rim! It's a bit heavy with 840g, but holds a grind very well (better than a DX32!).
